This Buffalo Chicken Salad is a simple, easy and healthy lunch recipe made with organic shredded chicken, celery and a zesty paleo buffalo sauce. Perfect in a sandwich or on a celery log or lettuce wrap, this salad is loved by kids and adults alike!
Let’s chat about this sandwich, or buffalo chicken salad on a log if you prefer! We’ve talked before about how I’m a diva when it comes to lunch. I’ll slave away for hours on breakfast or dinner but lunch needs to be the most convenient meal possible or else it’s just gonna be popcorn, avocado and eggs (I wish I were kidding).
If you’ve already got some leftover chicken on hand, this recipe takes less than 5 minutes to make. It can also be tailored to your spice level too.
In a rare turn of events I went light on the spice (you’re welcome), but if you’re anything like me when it comes to spiciness, feel free to go heavy-handed. No matter how spicy you like your buffalo sauce just know that this recipe is ultra delicious and the perfect last-minute lunch.

Ingredients in Buffalo Chicken Salad
- Rotisserie chicken – I use pre-made rotisserie chicken. You can use your own grilled chicken or buy store bought.
- Celery – adds some veggies and crunch.
- Green onions – use the whites and light green parts only.
- Hot sauce – any hot sauce will do here. I like Franks Red Hot or Cholula but use whatever you have or prefer.
- Butter – make sure it’s melted!
- Spices – garlic powder and paprika. Don’t forget your salt and pepper too!
- Lemon – Ideally use fresh lemon juice.
Recipe Tip
Serve your buffalo chicken salad on your favorite bread or for a grain-free option I like celery logs (chopped into thirds) or bibb lettuce for lettuce wraps.
